Roasted Garden Tomato Spaghetti Sauce

This easy roasted tomato spaghetti sauce is a delicious way to turn fresh garden tomatoes and sweet grape tomatoes into a rich, flavourful homemade sauce. Roasting the tomatoes brings out their natural sweetness and deepens their flavour, making this sauce perfect for pasta, pizza, lasagna, and so much more. Best of all, it freezes beautifully for an easy homemade meal later!

Ingredients
  

  • 6-8 large ripe garden tomatoes, cut into chunks
  • 2 cups grape tomatoes, halved
  • 1 small onion, quartered
  • 5-6 garlic cloves, peeled
  • 2-3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 tsp dried basil (optional)
  • 1 tbsp tomato paste
  • 1-2 tsp sugar, only if needed

Method
 

  1. Preheat oven to 425F.
  2. Place tomatoes, grape tomatoes, onion and garlic on a large baking sheet.
  3. Drizzle with olive oil and sprinkle with salt, pepper, Italian seasoning and dried basil (if using) Toss to coat.
  4. Roast for 35-45 minutes, stirring once, until the tomatoes are soft and beginning to caramelize.
  5. Transfer the roasted vegetables to a blender or food processor.
  6. Add tomato paste and blend until smooth.
  7. Taste and adjust the seasoning. Add a small amount of sugar only if needed.
  8. If the sauce is too thin, transfer it to a saucepan and simmer uncovered for 10-20 minutes.
  9. Cool completely before freezing.

Notes

Freezer Tip: Freeze in 1-2 cup portions in freezer-safe containers or bags. Label with the name and date and freeze.
